Chicken Sausage and Potato Skillet

This is a quick and easy weeknight meal that is very hearty, warm and filling. Easy to make it your own!

Ingredients:

2 packs mild Italian chicken sausage (I use Aldi Kirkwood variety), cut into slices

1.5 lbs potatoes, diced

1 red pepper, sliced

1 yellow pepper, sliced

1 onion, sliced

2 tbsp olive oil

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

1/2 tsp paprika

Directions:

  1. Cook potatoes in a pot of water until they are almost soft. (I like to do this first and let them cook while I do the rest of the cutting)

  2. Drain potatoes. Set aside.

  3. Heat oil in a large skillet.

  4. Add meat, potatoes, peppers and onion. Sprinkle with spices

  5. Cook until peppers are soft, potatoes are done and onions translucent.

  6. Enjoy!
